This traditional method sparkling wine is the culmination of an extraordinary amount effort on the part of SHABO winery to take the moderate Black Sea climate and terroir, notably of the same latitude as central France, and French grapes Chardonnay & Pinot Noir, to produce a beautiful, decadent bottle of fizz.
They actually went a step further than merely taking inspiration - the champagne grape varieties Pinot Noir and Chardonnay were purchased in central Europe, transported to Odessa planted on specially selected micro-plots, and in addition, all stages of production are managed by the Institut Oenologique de Champagne.
For every bottle sold, Other World Wines make a donation to charities helping to rebuild Ukraine.

Winemaking in Shabo - the town to which the winery owes its name - has been culturally embedded since 1822 when swiss settlers were invited to cultivate the town vineyards. These days, the winery is operated by a passionate and talented family of internationally recognised Georgian winemakers, making use of modern facilities and the Black Sea climate.
